So, it's been about 2 1/2 weeks now that we have been gluten free. (I'd say about 95% - I haven't called various food suppliers to see what they mean by "natural flavors," and I am told to assume it could be gluten.) The learning curve continues, but it is "do-able." We have been told that Joey is also intolerant to milk, but that is the difficult one for me. We have eliminated drinking cow's milk and currently have almond milk, soy milk, and rice milk in the refrigerator. It's the whey in Cheetos, the butter on vegetables, the cheese in macaroni and cheese. We have made great gains, but have not mastered casein free, as of yet. I think - one thing at a time. . . . .
Jose is thrilled with the change. He has a wheat allergy and has wanted to be gluten free for awhile. However, since he didn't follow the diet outside the house on his own time, I didn't believe it was worth the effort on my part. Jose is doing well - he thinks it's the best!
Joey was thrilled with the initial change. Any time we talked to someone, the first thing he wanted to tell them is that we are gluten-free. We waved to the neighbor across the street and shouted "hi." He whispered to me, "Tell her that I'm gluten free." He always makes me laugh.
I didn't have to tell the teachers at school twice, because Joey told them multiple times. There is a boy in Joey's class who has Celiac disease, and Joey has always been intrigued by it. Luckily, he has a great same-age role model who is a great self-advocate. Joey has finally become frustrated with not having some of his favorites. He said, "Everything has gluten!" I do feel bad about it - it's tough for a little guy who loves chicken nuggets and macaroni and cheese. I suggested he talk to his friend at school about it. He said he already had, "He said I'll get over it." I couldn't help but laugh.
We are on our way. We have recently added digestive enzymes to his diet. I have read in one place that some gluten-intolerant individuals can eat gluten as long as they take the digestive enzymes. This is a great thing to know for birthday parties with pizza and cupcakes. We'll see. I am currently hiding the enzymes in Dove dark chocolate. Joey has already figured it out (in less than a week). He always keeps me on my toes. I always say the easiest thing with him has been potty training. Now, now, I should say he is a quick learner and quite the cuddler. I have so much to be thankful for, but he is such a negotiator and stubborn. . . . just like his father!
Anyway, we are on our way! I think it's been hardest for me - I've taken on the challenge to make this transition easy for Joey with lots of fun foods and still maintaining a healthy diet. I will say this week Joey's class had cupcakes, and the teachers report Joey did great choosing one of his "special snacks" I have provided. No big complaints! It has been easier in some ways than I thought it would be, but requires so much more preparation time - hopefully, that is a temporary, transitional thing.
